Boost your immunity with simple and delicious Palak Khichdi


Ever since the lockdown phase has begun, everyone is busy following cooking trends. Right from celebrities to food enthusiasts, the quarantine phase has been quite interesting for some people. But aren’t we already bored of cooking exotic and elaborate meals and our hearts crave for a delicious comfort meal. You simply can’t think of a delicious comfort meal without the mere mention of Khichdi. No matter, where you go, every region in India has a unique variant of khichdi.

A quintessential part of the Indian cuisine, khichdi is the most healthy yet delicious comfort food that can be made in just a few minutes without putting in much efforts. So, without a further ado here’s a delicious khichdi recipe with a twist of spinach

This amazing leafy green is loaded with vitamins and minerals such as potassium, magnesium, and vitamins B6, B9, and E. A great source of iron, this leafy green has high amounts of carotenoids, vitamin C, vitamin K, folic acid, iron, and calcium.

How to make Palak Khichdi at home

This bowl of comfort food is the simplest thing you can make for days when you just want to eat something healthy and delicious. You just need a few simple ingredients in place to nail this quick and easy immunity boosting Khichdi.

To make this simple dish, take a large bowl and mix moong dal 1 cup and 1 cup rice, wash them thoroughly. Next, take a pressure cooker and add 3 cups of water. Add a small pinch of salt and cover the lid. Allow the rice and dal to cook in the steam for at least 6 to 7 minutes. Once done, turn off the flame and drain the excess water and keep this aside.

Next, take a pan and heat it over medium flame, add 1 ½ tablespoon ghee, this will make your khichdi delicious and aromatic. Then add 1 teaspoon, two dried green chilies, cardamon 1-2, one bay leaf, cook these spices for a minute. Then add finely chopped onions, garlic, and green chilies and tomatoes, saute all these together with a salt and pepper as per your taste, if you like it spicy you can half a teaspoon red chili powder and cook all these together till the veggies turn golden in colour.

In the meantime, wash spinach and par boil them with a dash of salt. Next, blend the parboiled spinach using a blender. Once the spinach puree is blended properly, add it to the veggies mixture. Cook for sometime and add the rice and pulse mix, add some water and cover with the lid. Once the khichdi is ready, transfer it to a plate and garnish with fresh coriander and a half a teaspoon ghee and relish!
